The Boxing Day ham toastie is as traditional for the day after Christmas as watching the Boxing Day test, trying to fit way too much wrapping paper into the yellow bin and making a dash to the supermarket for AAA batteries for the children’s new toys.
This year, we’ve decided to elevate the humble ham toastie to new heights, with the inspiration of Larissa Takchi’s exclusive (and irresistible-sounding!) Glazed Ham recipe for Castle Towers. Thanks to Larissa’s zesty new take on the classic ham, we’ve been inspired to create a more delicious, decadent and festive Boxing Day ham toastie than ever before. Forget a slice of ham and sprinkle of tasty cheese… we’re talking avocado, mature cheddar, may and more!
Try one yourself this Boxing Day – if you can wait that long!
INGREDIENTS:
- Shepherd’s Traditional White Sourdough
- A few slices of thick-cut glazed ham
- Finely sliced purple cabbage (or rocket, baby spinach etc)
- Ripe avocado, sliced
- Sliced tomato
- Aioli
- Butter
METHOD:
Butter BOTH sides of the sourdough, add mayonnaise to one piece of bread and pile on your toppings. Finish with cheese as the top layer, then generously season with salt and pepper. Top with your second piece of sourdough.
Meanwhile, heat a frying pan and spray lightly with olive oil. Carefully place your sandwich into the hot pan, pressing down with a spatula. Flip with the aid of a small plate pressed onto the sandwich to ensure it stays together as you turn it.
When golden on both sides with melted cheese, turn out onto a board and cut in half. Repeat as needed to feed the hungry Boxing Day hordes!
