We’re a bit of a rarity in the Sydney bakery set, because we bake both sourdough and yeasted bread, which means there’s something for the whole family in our range!
All of our bread is handmade in our Sydney bakery, from wholesome and locally sourced ingredients. The main differences between our sourdough range and our non-sourdough range is simply that non-sourdough bread has packaged yeast added to it, while sourdough gets its ‘lift’ from the wild yeast cultures present in the culture which we add to it. This makes the ‘crumb’ (the inside) of the bread fluffier and lighter, without the dense chewy texture and holey appearance of sourdough.
Additionally, yeasted breads are baked in tins here at Shepherd’s, which means they’re a squarer, more regular shape. Some people prefer this for sandwiches, which totally makes sense!
